Cured cheese from a hard or semi-hard paste, with few or none small and irregular eyes distributed in its white and grey dirty dough, without crust. It has a low cylindrical shape, with straight and smooth faces and without defined edges, intense and sharply spicy and an active characteristic aroma.

This is a cheese to show respect for. With a touch of favoured spice and a strong rich taste from the cured sheep and goat's milk used in its production. One of the main characteristics of this cheese is that it is left to age for at least 9 months and because of its intense flavour is valued by serious lovers of cheese. Queimoso is an ideal choice to be appreciated with Port wine and to replace ordinary Parmesans.
