Ovelheira is made from sheep's milk. It is entirely hand-made, in the literal sense of the term, as the curds are broken up by hand and not cut up with an implement as is usually the case even in artisan cheese production. This is a cured cheese produced using raw sheep’s milk. It is white or yellowish and semi-soft, with a buttery flavour obtained from the raw milk. It has a soft crust and smooth texture, it is so soft that it is almost spreadable. Its aroma has a rich, perfumed intensity as a result of the superb grazing of the sheep. The sweet, slightly burnt coffee character of the sheep's milk which comes through in the final taste. Ovelheira has a mild flavour combined with an intense aroma from its maturation period of at least thirty days.
