PRODUCT DESCRIPTION

This cheese is produced from raw sheep's milk, that is coagulated with cardoon thistle instead of traditional animal rennet. Its very particular and appreciated organoleptic characteristics, are closely linked to the flora of the Arrábida Hills grasslands and the use of a variety of thistle flower,spontaneous in the South (Cynara cardunculus L.). Presents a yellowish, buttery and creamy texture, with little or no eyes and close texture, easily deformable. The flavor is typical, clean and unmistakable. Defined as a mixture of sour and salty, with the presence, almost imperceptible of some acidity and spicy, making this a truly unique flavor.

The maturation takes place at a minimum 20 days.
